Super Simple Cornflake Almond Butter Lunchbox Cookies

Looking for a super simple new recipe to include in your kiddos lunchbox? Then here you go. Seriously ANYONE can make these. It’s almost the same way you would make rice Krispy treats except for completely different ingredients and a completely different flavor. Although, you could make these with peanut butter… almond butter has such a sweeter flavor, that makes them that much more special and delicious.

With these 5 ingredients, you can make a different no-bake cookie that easily travels without making a mess.

Get little hands busy in the kitchen with this one too. It is difficult to mess this one up, so you can relax knowing that they will still taste yummy.

This doesn’t require baking, but it does require heat. I stress how hot the liquid and pot get, but still let him pour and stir at this point.

Once the sugar, butter and corn syrup reaches a boil… then add the almond butter.

Don’t feel like you have to use cornflakes. Any of your favorite cereal will work, just keep in mind nothing that has a strong flavor already, the almond butter will already have a sweetness to add.

It is up to you how much cereal to use too. I usually start with about 2 cups and add as needed.

Pour the mixture over the cereal and incorporate well. You want each flake to get a little bit, remember this is the glue to hold it all together.

I use an ice cream scooper for almost all of my cookie projects, This one is no different. You could easily just scoop them out with a spoon or even your hand.

Let them air dry for a few minutes or so until the liquid hardens a bit and you are ready to enjoy. These are extremely rich so a big cold glass of milk pairs perfectly with them.

Ingredients:

1 Cup Sugar

1 Cup Corn Syrup

1 Cup Lindsay Almond Butter

2-4 Cups Cornflakes (to taste)

2 Tbs. Butter

Directions:

Bring sugar, butter and corn syrup to a boil. Once it reaches a boil add Lindsay Almond Butter. Remove from heat and stir until smooth. Pour mixture over cornflakes. Gently stir to allow liquid to reach all flakes, making sure not to crush them while stirring.

Scoop out and form cookie shapes on a cookie sheet or parchment paper. Allow cooling.
