Kids in the Kitchen – Cowboy Bean Salad – Low WW Points

I have no idea what made me think of this recipe. It is one of those things that I know I made in Home Ec ages ago and loved… but isn’t something I think I have ever made since.

Sidenote: is there still a such thing as Home Ec?

One of my favorite parts about this “salad”, I use that word loosely, is the crunch on top. Normally in the past I would have used Doritos… but since discovering Fit Crunch Protein Puffs, I have fallen in love with them and the protein they offer. They are the perfect compliment to this meal.

What you need:

Iceberg Lettuce (0 points)

Black Beans (0 points)

Sweet Corn, or Fiesta Corn if you can find it (0 points)

Low Sodium Taco Seasoning (0 points)

Soy crumbles or ground meat (2 points for 1 cup cooked)

Tomatoes (0 points)

Fat Free Catalina or French Dressing (2 points for 2 tablespoons)

Fit Crunch High Protein Puffs (2 points for an entire bag)

Cheese — you pick what you enjoy (check your points here)



I have been dabbling in looking at WW points and this is such a low point meal for the taste. It honestly feels like a cheat meal. I could have used low fat cheese for even less points.

Did you see in my Instagram stories the perfect way to dice tomatoes? It’s meals like this that let me get my kids in the kitchen and get them excited about dinner.


The beauty with this is that all of the ingredients get thrown into one bowl. Less dirty dishes!!! Wahoo!! It also means that you can add or subtract ingredients based on what you have in your kitchen or what your kids will eat.

Have them mix all of the ingredients together too, or brainstorm other things to add. Get creative!
