Two Ingredient Pumpkin Muffins – WW Friendly

Saturday mornings are made for baking. It is cloudy and overcast in South Florida at the moment as another Tropical Storm rolls through, so it makes the perfect morning for these to easy to be true Pumpkin Muffins.

All you need is a box of Spice Cake Mix and a can of pumpkin. That’s it.

Fun baking fact: if your muffins stick to your liners, just spray them with cooking spray just like you would a pan and it makes them much easier to come out. This way you aren’t leaving half the muffin on the paper.

Put all of the ingredients into one bowl and mix. Easy. Have your kids do it…

Yes, that’s it. No sugar, no flour, no mess.

Bake for 10-12 minutes on 325… or use your best judgement with your oven.

Let them cool, and enjoy. These are super simple to use as a breakfast on the way to school or to pack in your kids lunchbox.

I have made a few batches of these this year for us and also for our neighbors. Such a fun way to enjoy pumpkin spice without all of the guilt.
